Ingredients

  • 1 pound ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce, divided

  • 1 teaspoon chili powder
  • 8 flour or corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Cook the Turkey: In a skillet over medium heat, cook the ground turkey until browned and fully cooked. Drain any excess fat.
